Eggless Ferrero Rocher Cake
We all love cakes don’t we and it's a bliss if it is eggless especially for people like me who are highly allergic to eggs.
And if you also cannot afford eggs for any reasons, but would love to have some cake, then your hunt stops here. Go for it!
All purpose flour - 1 ½ cup
Curd - 1 cup
Baking soda - 1 teaspoon
Baking powder - 1 teaspoon
Vanilla Essence - 1 teaspoon
Castor sugar - ¾ cup
Vegetable oil (I used ground nut) - ¼ cup
Ferrero Rocher - 10 pieces
Mix curd and baking soda together, it will froth in a few minutes.
Now mix all purpose flour and baking powder together.
In a separate bowl, whisk sugar & oil nicely until you can see a smooth paste.
Add curd mixture in the sugar & oil mixture and whisk it nicely.
Now add vanilla essence to it and mix it again.
Add the flour mixture to it, do ensure to add it in batches so that there are no lumps. And avoid overmixing it, no matter how satisfying it is :D
Last but definitely not the least, add crushed ferrero rocher to it and mix it nicely again.
Once all the contents are mixed nicely, we are good to pour it into the cake mould. Grease it nicely with the vegetable oil and line its bottom with the parchment paper.
Bake it @ 180 degree celsius for 30-35 minutes. 30 minutes worked for me, after 30 minutes check it with the toothpick and if it is done remove it from the OTG cautiously.
Take it out after 5-10 minutes.
Enjoy it as it is or frost it with some nice cream cheese.
