Nutella Linzer Cookies
These Nutella goodies can be a good gift for Valentine’s/Galentine’s Day.
Here is the recipe :)

Ingredients:
All purpose flour - 1 ¼ cup
Almond/hazelnut flour - ½ cup (I used almond)
Butter (cold) - 100 gms/ 1 stick
Powdered sugar - ¾ cup
Vanilla Extract - 1 tsp
Salt - ¼ tsp
Nutella - to apply on cookies
Method:
Whisk butter in a large bowl with a hand whisk till it becomes nice & fluffy.
Add sugar to it and beat it again to combine these two properly.
Sift together the flour & salt into the same bowl and add vanilla extract.
Now add almond flour and with your hands mix this to make it a dough.
This will be a fairly soft but malleable dough.
Cover it with sling wrap and refrigerate it for 2-4 hours.
After 2-4 hours, remove it from the refrigerator and place the chilled dough b/w two sheets of parchment papers and roll it about ¼ inch thickness.
Cut out the desired shape and place them on a cookie sheet. Do not waste the remaining scraps of dough, roll them out again and make more cookies from them.
In a preheated oven, bake them for around 10 minutes at 180 degree celsius temperature.
Allow cookies to cool down before removing them from the cookie sheet.
Once these are hard and comes at normal temperature, spread Nutella on the bottom half of each cookie starting from the middle till the end, do leave a thin border.
Dust the remaining half of the cookies with powdered sugar.
Place the top of each cookie on its corresponding bottom half and enjoy:)
Important tip- Do keep your eagle’s eye while these cookies are getting baked, if you observe brown border before 10 minutes, do not bake it further else they’ll burn.
