Ram Ladoo

If you are also befuddled with its name and expecting it to be sweet like me, then I am sorry to disappoint you but trust me these small balls full of flavors are uber delicious.


It's commonly eaten in Delhi as a street food and popularly found in Winters as in it goes the hero of Ram Ladoo which is some piquant Radish.





Let’s get started with the recipe below :)


Ingredients





For Ram Ladoo-


Moong Dal [Split & skinned yellow lentils] (1 cup)

Urad Dal [Split & skinned black gram] (½ cup)

Chana Dal [Split bengal gram lentil] (¼ cup)

Green Chilies (3-4)

Ginger (a small piece)

Asafetida (¼ tsp)

Baking soda (a pinch)

Salt (as per taste)

Radish leaves paste (¼ cup)

Oil - for frying


For garnish-

Mix of grated Radish-


Grated Radish (1 cup)

Green Chilies (2-3 finely minced as per taste)

Radish leaves (¼ cup, finely minced)

Coriander leaves (¼ cup, finely minced)

Lemon juice (1 tablespoon)

Salt (as per taste)


Green Chutney -

Coriander (1 cup, finely chopped)

Radish leaves (½ cup finely chopped)

Green Chilies (2-3 finely chopped as per taste)

Lemon juice (1 tablespoon)

Salt (as per taste)


& Tamarind Chutney.


PS - this makes 5-6 servings, reduce/increase the quantity as per requirement.


Method.





For Ram Ladoo.


  1. Soak all the lentils together for 4-5 hours.

  2. Remove all the water and grind with ginger & green chilies.

  3. Prepare a thick paste, now add radish leaves paste along with salt & asafetida.

  4. At this stage, mix the paste nicely in circular motion with spatula.

  5. Add baking soda now and mix it again.

  6. Prepare fritters of small size by frying in hot oil and keep flame at low all time.

  7. Once golden yellow, then put them in a plate covered with a paper napkin.


For radish garnish.

  1. In a separate bowl, add all the above mentioned ingredients for this and mix it nicely.

  2. Keep it aside.

For green chutney.

  1. In a mixer, add all the above mentioned ingredients and make a fine paste.

  2. Keep it aside.


Serve.


In a bowl/small plate, keep 5-6 ram ladoos, garnish with green & tamarind chutney. Spread some grated radish mixture, again add green & tamarind chutney as per taste and relish.
